Do I need an sli/crossfire ready psu when I'm just using one graphics card? Or are they mainly when running two?

I would recommend listing the proposed parts to the build and letting the experts recommend a good power supply. The short answer is no, you don't need a SLI/Xfire ready PSU if you're not going to SLI/Xfire. However, that qualification usually denotes a better power supply as opposed to one that isn't ready for it. For all intents and purposes, the whole "SLI ready" thing is sort of a marketing scheme anyway. Just be sure that you have enough Amps on the 12v rail to support your video card and the like. If you never plan to SLI/Xfire, you can get a PSU with only one PCI connection, but I would recommend getting one with more than one, just in case you need it for a second card, a PCI SSD, etc.

No... Why would you?

Look at how many PCI-E connector your GPU needs and how many of those your PSU has. Also remeber if the card needs 6pin or 8pin connectors. What card are you using exactly?

Also, make sure the PSU has enough wattage.

Good for future, if you change your mind. NO "sli/x-fire ready" is a marketing term.

I don't think I'll be upgrading anytime soon, I'm really only interested in playing a couple steam games and minecraft. Doing a pc build is just a bucket list sort of thing for me. >.<

The corsair is way better than that CM. 10 extra Amps on the 12v for one thing...

Sounds good, and the loss of 50w won't be a bother then? Also, should I have 8gigs or 16gigs of ram for this set?

Thank you! Deciding to go with all of your suggestions!
Last question, I need a nice case to fit all these things, nothing to pricey, any recommendations?

I had originally picked out the Cooler Master Storm Enforcer sgc-1000-kwnl, should I stick with it? Or can I find something a tad bit cheaper?
