I keep getting mixed answers for this...I'm looking at getting a GTX 760, but was considering going 1440p. Can the 760 handle this? Or would something like the HD 7950 be a better option because of the 3gb memory? Thnx for any advice.

If you want ultra settings at 1440p with decent framerates all the time in every game, I wouldn't choose either. You should be able to do high with certain settings turned down though. I would choose either.

Most of the games I want to play are a bit older. Probably the most graphically intense game I'd be playing is Skyrim with no texture mods. The other games are older ones like Fallout 3, Fallout NV, Mass Effect, Last Remnant, S.T.A.L.K.E.R, etc. Could I play those at 1440p with high settings at a decent framerate with either of these cards? Or should I just stick woth 1080p if I don't want to spend more on a card?

They should be OK but I looked at a 27" 1080 Asus in a local store and thought it looked great. May want to see one in person before you decide.
