I turned off my pc and unplugged my SSD to take a look at the SATA power cable. Plugged it back in and turned the pc on. Ever since then, it takes 30-60 seconds to get to my desktop and takes ~15-20 seconds to shut down. It was 3-4x quicker previously.

Any ideas as to what could have happened?

That 30-60sec is after the boot???i mean i begin to count whe Windows logo appear or you begin when you press the button?

Whats your ssd and mobo???
Check if you connected right.
Check if the ssd is connected to the Sata III controlled by your Chipset/mobo, and not by the Marvell controller if any.
Do some CrystalDisk Benchmark to have a basis.
Check if the SSD is AHCI mode on the bios.
