What type of PC will I need to play games at max settings with a 2560 x 1440 resolution?

Minimum 7970GE/770, 780 is better, but SLI/CF is really what you need to get great FPS.
You should get a bit higher FPS than these since you'll be running at a slightly lower resolution.
If there IS a higher quality setting than that (not sure) then you'll need two-way 780s or three-way 770/7970GE.
