I am in the process of hooking up my PS3 to my Monitor and I recently bought a HDMI splitter to hook both my PS3 and PC to my monitor with HDMI. I then started wondering how I was going to hook my PS3 up to my speakers, which then gave way to a concern of mine.

With my PS3 plugged into my monitor with HDMI will it be possible to also plug my speakers into my PS3, or will the HDMI connection hinder that?

You can set it to output audio to the RCA (i think that is what it is called) and then get an adapter for the audio leads from the that to standard a 3.5mm jack.

You can set different outputs for audio and video. So you'd set the video to ouput via HDMI and then set the audio to output to be via "audio input connector / SCART / AV MULTI"

Also check you monitor for a 3.5mm socket. Some have them for situations like your's, where audio comes in through the HDMI.
