The GPU on the 5800k APU is going to be useless at all so I don't think it's a good choice on the proc

If this is intended to be a gaming machine, an APU is pretty much out unless your budget is ludicrously low. If you're willing to go slightly over $700, you can get a far more powerful gaming system:
