I'm currently using a radeon 7850 2gb in my rig. Should I get another one, or splash out on a single 7970? Thanks :)

In general you should get the best SINGLE AMD graphics card since crossfire has many issues.

AMD drivers are not doing well in cf so far as lagging/is concerned. FPS benchmarks look fine.
There is hope that will change.

My suggestion is to stick with a great single card as long as it will do the job.
I suggest you sell the 7850 in favor of a much stronger card like the GTX780.

A 7970 or GTX770 would be only a modest improvement.

But... how good do you need to be? at 1080P a modest upgrade should be very satisfying.
If you are looking at triple monitor gaming, or a 4k monitor, all bets are off.

I'm trying to spend the least amount of money really. Buying a new 7850 would be cheapest, but how would it compare against a 7970 or GTX770? And would that be good enough for 1080p gaming?

Well look. The GTX770 and HD7970 GHz is almost twice as good as the HD7850 at 1080p.
So even if you Xfire the HD7850 and get 80% scaling(which is not gonna be the case, it will be less), the GTX770 or HD7970 is still much better. Not even to mention the microstutter issue that Xfire has.
