How to enable SLI?

I have three 1920x1080 monitors. I like to run them like this whenever I'm not gaming:

This is when I have it set to "Display All Monitors" in the Nvidia Control Panel. When it's like this, it disables SLI even though I want it to be on.

Whenever I am gaming, I want to run it on all three monitors but to do that I have to turn on "Nvidia Surround", which also enables SLI which is good, but when I'm done gaming and I'm just browsing the internet, I only get one taskbar and the desktop background is stretched out and Chrome acts funny and Steam takes up all three monitor windows, etc.

tl;dr - How can I play games on all three monitors with SLI while keeping my desktops how they are in the screenshot?

I know how to set up Nvidia Surround. I want to be able to triple monitor game with SLI without surround being on because I don't like how surround makes programs and the desktop act. It gets rid of two of my three taskbars and it stretches some programs and makes other programs act funky.
