Need help from the tech gods buidling my new system!

So, I have finally deiced to scarp my old system for parts, and I am going to use the extra cash to poor into a brand new build. My budget is limited (around 800 bucks, if my old PC sells) but after much dreaming and shopping around, I have come to a semi final conclusion on what I want for the most part, unless someone can show me the errors of my ways or show me a better, cheaper build.

What I have in mind for the build:
For the mobo its a toss up between the ASUS Crosshair V Formula-Z AM3+ and ASUS SABERTOOTH 990FX

For the processor I was thinking an AMD Phenom II X4 970 Black Edition Deneb 3.5GHz

The ram I was going to go with either Crucial Ballistix Sport 8GB or CORSAIR Vengeance 8GB (both DDR3)

Its when It comes to the graphics cards is where I am at a stand still. I can not decide on Nivida or AMD, and having only experience with Nivida in the past so AMD's line of graphics cards are new to to me. At the moment, I was looking at ASUS GTX 550 ti, With plans in the future to add another in SLI however I am open to crossfire (since both mobo's support both) .

I was also going to need to buy a new PSU, and according to the newegg calculator even with the added card It says I would only need a 603w PSU, so I was shooting for a 850w one, if anyone knows better, I am all ears.

This along with a case, fans, cables and other things such as DVD drives has got me slightly over budget

I will be getting a full size case that has rave reviews on its cooling and I intend to overclock at least the processor and the graphics cards, and maybe, if I understood it better, change the timing of the ram, so the easier the over clock, the better. Also keep in mind, that I am trying to follow a red/black theme of the entire system, however its not critical if I can save a chunk of money

So my tomshardware tech gods, any suggestions? Anyone have any experience with either of these mobo and processor combo? Maybe a similar processor (or better) for around the same price? I intend this to be a mid to high level gaming system on a budget, with lots of room for part swaps in the future. Also, Any recommendations on a great graphics card that will power through anything I though at it (of coarse I cant get a geforce gtx 690, be realistic).

Current thoughts:
You are going to get a CPU bottleneck with that setup. Your current plan spends way too much on the motherboard and not enough on the Graphics card. Not only that, but you can get a FX-6300 for less than that Phenom, it has 6 cores instead of 4, and it can similarly overclocked well too. Do you prefer AMD parts? I wouldn't consider SLI/Crossfire at the $800 build price either. If you plan on overclocking the CPU, you will want a good CPU cooler.

Another important question: Do you want an SSD? If you want one, what size do you want? It wouldn't give higher frame rates, but it loads...
