I'm definitely leaning towards the first for the price, but does the performance between the two make one better over the other no matter the price? Thanks for any and all help.

The 760 is definitely the best, but for that price I would most likely go for the 7870. It's a great card and that price is killer!

To put it short the performance of the 760 disowns the 7870 however the 7870 will be able to play BF3 at high settings (with in-game effects such as AA activated) at a nice frame rate.

Depends on your requirements.

What resolution and how many screens? also if your insisting on playing Ultra at every turn you can than you need to look at forking out the extra.

However if it's 1 screen and your fine with High - Ultra settings then the HD 7870 is a good choice, by the way CPU permitting the HD 7870 will play a lot of games on Ultra anyway.

Just one screen. The CPU I'm going to be using is the AMD FX6300. That will play almost anything Ultra?

For one screen it would be fine and that CPU would pair well with either but are you running 1080p?

TBH this is really down to how much you value a bargain over top spec performance?

Check this out as a rough guide or review some vs bench marks.
