Triple 60Hz displays or a single 120Hz display?

Hey guys, I'm getting a new pc soon (CPU: 4770K (OC @ 4.5 with watercooling, GPU: GTX 780 Phantom) and I originally wanted to go with a triple monitor display, I found a great deal on 3 24" monitors with slim bezels (7mm) and that was as far as my monitor budget went (570€, yes I'm buying from Europe, but that doesn't matter). But then I came across a 120hz monitor which made me think again. My question is, can anyone please link me all the 120hz monitors they know? Preferably not too expensive, 27", and not 3D. And I can't decide with which option to go, so can anyone help me choose between triple 60hz or single 120hz.

PS: I'll be mostly playing racing games, DiRT, NFS, etc, FPS games, and RPGs.
So decent picture quality and low response time would be perfect. 5ms max, preferably lower.

Racing Games and RPGs: 3 Monitors
FPS: 120Hz

If you can give me a full budget with all your requirements and country, I can put together a nice build for you.

I'm not sure how a 780 will do with surround. I think it might be just a bit under powered. For a single 120hz monitor it will be killer. With that said I would say to go with 780's in SLI or if budget is a issue then 770's in SLI and go with the 3 60hz monitors. Triple screens adds a ton to the gaming experience. I have 770's in SLI and play in surround I would never go back to a single screen.

I still haven't bought the PC, but I got it all figured out. For a single monitor, here are the specs:
1080p or more. 120hz or more. 5ms or less (GTG). Decent colors, good enough for gaming, nothing too fancy, I'm not a photo expert. My budget is 400€ max. And the country is France.

I agree, I've seen benchmarks. And on ultra with AA on it hardly keeps up over 35 - 40 FPS. I won't be cranking up the details too much, and it's the fastest 780 available, with a nice OC, it should do over 60 FPS easy. Plus, I will be adding a second 780 in a couple months. So I really don't know whether it's 3 monitors or a 27in 120hz, then I get a second card, and I get 2 more of those monitors.
