I have got a monitor that only has a VGA port, should I return this and get a better monitor with a HDMI port or keep the one I have got. (It isn't opened yet)

HDMI is a digital interface like dvi which gives better image quality and can also transmit sound if the monitor includes speakers.
I would return it assuming your graphics card/adapter can handle dvi or hdmi.

Okay I will, when I set up the PC shall I plug in the VGA and the HDMI cable from the case to the monitor or just the HDMI cable?

It depends on what kind of monitor you are purchasing most monitor with HDMI support do come with cable..but if not then you can buy it separately but first make sure that whether cable is included with monitor or not....
enjoy gaming!!!
