3 DIMMs in an ASRock Z75 Pro3?

Can I install 3 identical DIMMs in an Asrock Z75 Pro 3 motherboard? Or do I have to have either 2 or 4? And if I can install 3, will they all operate as dual channel? Will any of them be dual channel?

Not quite.
When you have an odd number of sticks, the matching sticks will operate in dual channel mode, and the odd stick will be in single channel mode.
But... that is not all bad. The extra ram will probably help performance more than the small bit you lose in cpu speed.

And... ram vendors will not support ram that is from different kits.

That sounds more like what I thought would happen. They are all the same brand, speed, voltage, etc but from 2 different kits (and 3 if I get the 4th stick). I may just stay with my 2 sticks (8 GB) and keep the extra as backup. I've had memory failure before on other machines...

Yes, you can install 3 DIMMs depending on the number of slots that is free. It is not mandatory that you need to go with 2 or 4 sticks unless you are trying to run the memory only in Dual channel mode. Well, it is partial - if you install 3 DIMMs, then the memory installed in the first channel will run in the dual channel mode while the single stick will run in single channel which is called - Flex Mode same which is explained by @geofelt.

Make sure you match the speed, latency and voltage. If you are not a overclocker and if you are okay using the standard memory rather than advanced memory then try crucial, kingston, search on newegg for ValueRAM or this site - http://www.memorystock.com/
