First Build tips greatly appreciated

Hello everyone first time posting on this site but I've been thinking about building my first pc, I did build one in high school for a class but that was quite a while ago
I mainly use my pc to watch movies and tv shows, internet, and schoolwork but I would like to get into gaming as well. Never really had a good enough computer to game, so thought this would be as good a time as any, basically hoping this pc can play latest games at highest settings or close to it

Is this a good build?
Anything here considered overkill or not enough (would prefer to stay in $2k range)
Any recommendations on changing any parts?
Any tips of the actual build as well?

would an i5 be enough in terms of gaming?
i don't mind paying extra for a higher end motherboard but if its a bit much i don't mind dropping it down but how is this one different from the deluxe i chose?

an i5 it definitely good for gaming. In terms a of real world performance you wouldn't see much improvement with an i7 compared to an i5 in terms of gaming.

You only really need an i7 if your going to be doing heavy video editing/encoding.

You could look up some benchmarks comparisons between an i5 and i7. Rather than taking my word for it.

The deluxe I'm pretty sure just has some extra features, and stuff for heavy overclockers. The board I showed you is a great board. You don't need the deluxe.

I'm not planning too but i would like to at a later time, is it easy to do, not that tech savvy to be honest. If its not too complicated i would do it during the build
Also, among the motherboards you recommended, which is the best, (I assume they are all equal in quality being asus) in terms of features (with or without wifi which may not be an issue since the system will be wired) and what i'll be using it for (movies, tv shows, gaming, internet)

is a single 2 tb hdd better than 2 singles i'm asking because it seems this one hdd is more expensive than the 2 that i picked unless its better for a different reason?

The board you have in your post is a solid board. If you were to get a different one I recommended it would probably be this one. I'm believe this motherboard is more overclocker and gamer oriented. And I think that the onboard audio is slight better though. Sticking with the board you already selected though is fine.

single 2tb hardrives are generally CHEAPER, however this one is more expensive cause I picked out quite a high performance drive

oh ok due to my noctua hsf i would need the lp vengeance (via compatibility on noctua's site) but would 2x 4gb be enough for performance or should i go with the 2x 8 gb?

2x4 gb is enough, and the way the setup works, means that you can upgrade to 16gb down the road

The other board I linked was a ROG board. I think it was the maximus hero model. It was only like 30-40 bucks more.
