Changing the path of libraries

Easy.

Open Windows Explorer
Create some new locations on the HDD - MyDocs, MyMusic, MyMovies (or whatever you want to call them}
Scroll up to Libraries
Rightclick on Documents, select Properties
Add... Add the new place you created on the HDD
Once added, click on it and select "Set save location"

Repeat for any other Libraries you want.

Now...anything you save to "Documents" will go to the place on the HDD
