Problem with going that route is I'm not sure how gaming will work. With two cards you might be able to game on only one card, even if it is in CF/SLI. I haven't heard how Nvidia handles SLI now that they support multi monitors like AMD does. Two cards is a way to go if you understand you might still be gaming on only one. And are ok with two sets of three monitors.

for 6 monitors single card you will need the eyefinity 6 cards

I hear this is the new king of such cards.

Don't forget unless you have display ports on your monitors you'll need to buy 6 active mDP to DVI adapters. At ~$30 each you'll be looking at nearly another $200 in adapters. So this one card will take your entire budget. You won't be able to game on all six, but the 7870 should be able to handle most games with ok settings on three of them. Or max out nearly all games on one.
