Trying to do a Variable Overclock

My full setup is in my sig, but I'm currently running a 3930K on an ASUS P9X79 Deluxe motherboard with a custom watercooling setup. I'm hoping to get 2 things from you guys:

1) A good overclocking guide - the problem isn't that I can't find any on Google, the problem's that I find too MANY, and I'm hoping someone can just point me to a good one rather than going through each one myself.

2) I'd like to set up an overclock that isn't ALWAYS applied. I pretty much leave my computer on 24/7 (as I'm sure most of you do as well), and I'd really prefer not to have my processor running at 4 GHz+ when I'm at work or sleeping. I'm fairly certain there's a way to use the Turbo Boost to do this, but I'd like to boost beyond the stock 3.8GHz, and I'm not sure how to go about doing this.
