So I'm building me a PC and plan on having dual 27" monitors and I'm planing on getting a EVGA Titan. Do I need to run two Titans or not?

You can just use one Titan. It has 2x DVI ports, 1 HDMI and 1 Display port.. so theoretically you can hook up 4 monitors. But 2 monitors will run perfectly on one single Titan.

Sort of depends on what your are up to.

Are they 2560X1440 displays?

Will you be using them both together for games? Usually it isn't best to do it this way because you end up with a bezel in the middle of your view.

Basically, if you plan on using two of the 2560X1440 displays in full eye candy mode with high anti-aliasing, the 6GB of RAM will come in handy.
