There is a list of comparisons of the boards, very little differences it will come down to the money you want to spend, and the "goodies" you want. They all support 32GB of ram DDR3 3000 overclocked.

I personally would go with the UD4H unless you want ALL the goodies which most people don't use. an example is the UD3H and UD4H have 1 LAN port and UD5H has 2 LAN ports.
Look through the comparisons list and see what is best suited for you, and if you are picky about the color that will also come into play with your decision, no one knows your needs better than you.

Have fun making YOUR final decision.

Only difference between UD3 and 4 is the power delivery system. It's better on UD4.
UD5H has different outputs array - different video outputs for integrated video (which you are not going to use anyway), one less internal USB2 header, dual lan, more SATA ports (but no eSATA on the back), more fan headers, two firewire headers (UD3 and 4 have 0) and support for X-Fi Xtreme Fidelity® and EAX® Advanced HD™ 5.0 technologies, whatever that is.

there are two revisions to the PCI-e, Ver 2.0 and Ver3.0. The 3.0 is newer/better, however currently to take advantage of 3.0 you would need to verify the your GPU can take advantage of 3.0
Unless you plan on running two Graphics cards in SLI or Xfire - No effective difference as you will only need the one slot @ X16.

Back plate array, Ref Bejusek comment:
This is the connectivity for plugging different things into the back of the Computer.

Which is best for OC. Generally you get what you pay for in terms of stability/quality. The Higer end one woud most likely have a higher stability factor at the HIGH end of Overclocking. But for a "mild" OC, all three would be OK.

I think I am going to go for the UD4H, but will EVO 212 CPU COLOR fit? because of the heatsink to the right side of the CPU socket.

That cooler is a nice one, I have to hyper 212 version, they look almost alike, I just caved and bought a ECO C240 the one nice thing with the 212 is that it stands tall enough that most of the DIMMs of RAM don't even come close to touching the heatpipes and it won't cost you an arm and a leg like some other coolers.

Under what circumstances would someone need to go for the better power delivery system?

What are the reasons that lead you to choose the UD4H over the D3H?
