I want to test if all my parts work just in case I need to return anything but my video card hasn't come in yet. So I was wondering if it's possible to do an external build and test it without the video card?

What kind of build did you make? intel processors mostly have an IGP so you can test it easily

Of course it is. Instead of plugging your monitor cable into your GPU you will plug the cable into the motherboard and use whatever graphics are included in your CPU.

It's actually a good idea to do when testing your system so you can eliminate sources of error.
