Changing default hard drives

So I have a newly built computer, and I got a 64GB SSD to put my OS and a few apps on to speed it up, and I also have a 1TB mechanical HDD for storage. Whenever I try to download or install anything it automatically goes to the SSD which is filled to the point it want it at. How do I change this to make things automatically save/install on the HDD?

Libraries - Documents, Music, Pictures, etc
Create some locations on the HDD. I prefer to go with MyStuff, with subfolders of MyDocs, MyMusic, etc
Under Libraries, right click on Documents. Select Properties
Either Add (Win8), or Include a folder(Win7)
Select the location you made earlier
Once added, select "Set save location"
Repeat for anything else you want to go to the HDD
