I recently played both (well first half of AC3 and then got bored and uninstalled) and would definitely recommend Hitman. Infact I'd recommend it over any other recent game I've played. Obviously very different styles of game though so will depend on personal preferences. Both very similar to their predecessors if that helps (though Hitman has been hugely improved interms of polish and presentation over the older games in the series).
