GTX 780 SLI (2 Way) for my PC Build? OP or Just perfect?

I will be buyying 3 of these monitors, BUT only 2 will be hooked up to my PC. I want the 1st monitor to be used for gaming, and I'll have my editing software and Internet on the 2nd monitor. Finally the 3rd monitor will be hooked up to my PS4 or Xbox One (havent decided yet...) Anyway

Is GTX 780 SLI (2 Way) OP or just perfect for only using one of the monitors for the actual gaming?

(I want a lot of FPS so if the answer is positive towards 780 SLI, then I will buy them)

Did the 3930k make the list cause of some specific application needs ? Because if just gaming, I'd stick with a Haswell build. If video editing is the editing you speaking of and ypu do it often and at aa hi level, the 3930k makes sense.

As for the cooler, id use the Phanteks:

1. The Noc is fugly and ya can get the Phanteks in a matching color scheme

If ya just gaming on 1 screen, I dont see the value in the twin 780s.... not for an extra $300

Im plugging 2 of them into my PC, the monitor on the left will have internet, twitter and YouTube.
The monitor on the left will have usually Full screened BF3, or Borderlands 3....a game

If I buy 2 GTX 780 SLI, will it be okay? I want a lot of FPS which is why im interested in doing this.
