How can I reset the default save location?

Okay so a little background will aid you with this question.. I have a very small SSD that I chose to put my Operating system on.. 30gb ADATA to be exact, and that brought along a ton of issues that I've had to try to deal with. I chose to move the default save location (basically the My Documents folder, where all the games I play place their saves and in game settings.. mods.. ect) to my larger, mechanical 1tb HDD, but I accidentally clicked apply on setting it to (S:/), so now all the saves and settings get saved to the HDD itself, not the subfolder I initially made for them. It works, and everything, its just extremely messy now, because I have about 600gigs of other stuff that was already on the HDD before I moved the 50+ folders for each games I play. When I go back into where I was told I woul dbe able to move the default loaction, I no longer have a "My Documents" location. It got replaced by an icon that brings me straight to my (S:/) drive and the options to change the location are for all the files in that location (all the saves and settings along with everything that was on that drive to begin with.) Is there any way I can reverse what I did and move just the saves and settings back to my (C:/) drive? I've tried to use the option in the location edit window for resetting to the default location which is (C:\Users\Zephyr\Documents) but when I click allpy on that, I get this error "Failed to build the list of regular subfolders under "S:\System Volume Information" access is denied"

after getting that error, I made sure I have the privileges, and I made sure my account has full control over everything

OK, maybe this is fixable:
Which drive is which? (bit confused with your description)
SSD (OS) = C or S?
HDD = C or S?

The Operating system is on the SSD, and that is the (C:\) drive
