Specs:

AMD FX-6100 @ 3.9GHz
1x Sapphire Radeon HD 7850 OC @ 920MHz
8GB Corsair Vengeance RAM @ 1600MHz

What power supply would be recommended for a PC of this spec?

a 500W PSU will be just fine

(dont make it a "3$" PSU

this could easily be run on a 450-500 watt PSU, a cx430 or cx500 would be a good choice if on a budget, otherwise maybe a seasonic or higher trim corsair. I'm not sure what else you have on your build, but this can give you a good idea of your ballpart after you put it all in:

AMD says a 500W PSU or greater for the GPU.

I'd get a 600W Corsair to allow for expandability down the road.

For a system using a single AMD reference design Radeon HD 7850 graphics card AMD specifies a minimum of a 500 Watt or greater system power supply. The power supply should also have a maximum combined +12 Volt continuous current rating of 27 Amps or greater and have at least one 6-pin PCI Express supplementary power connector. Some of the non-reference design Radeon HD 7850 graphics cards require at least two 6-pin PCI Express supplementary power connectors.

Total Power Supply Wattage is NOT the crucial factor in power supply selection!!! Sufficient Total Combined Continuous Power/Current Available on the +12V Rail(s) rated at 45°C - 50°C ambient temperature, is the most critical factor.

Overclocking of the CPU and/or GPU(s) may require an additional increase to the maximum combined +12 Volt continuous current ratings, recommended above, to meet the increase in power required for the overclock. The additional amount required will depend on the magnitude of the overclock being attempted.
