Is it time for some more upgrades?

I decided to upgrade to a high resolution monitor which in turn is making me up video cards, but my question is do I need additional updates to my system?

My processor is a little dated but is OC'd quite a bit. Replacing the CPU would obviously mean a new motherboard too. Maybe some more ram would be best?

Same with the gpu. You'll need MSI afterburner, gpuz, etc. to see gpu usage. RAM can be a little tricker because if there is more available windows will use more, up to a certain point. 8GB of RAM is more than enough for gaming at the moment. You will notice no difference with 16 GB.
Here's a foolproof way to see if you need a new cpu. When you are playing those games, BF3 will be more demanding on the cpu than Payday 2, have task manager open on the performance tab. Look at the cpu usages. If you see any of the cores maxed out then your cpu is holding you back. If you don't see any cores maxed out then your cpu is fine.

Your i5-750 @3.8 should still be great for gaming. Your gaming experience should be great with a 7950. 8gb of ram is plenty for gaming, adding ram won't make a diff in games. From a gaming standpoint, with that nice OC on the CPU, I think you are good to go for at least another CPU generation.
