If am going to upgrade eventually when I can get a decent DDR3 2x8gb setup for a fair price( though I have a feeling it is going to go the same way ddr2 went....$up) but my question is will adding that much more ram give you better performance in games at higher resolutions?

Solution
Yes it will ..... game uses what it uses but background processes use RAm and RAM allows you to store more regions in active memory. Also can use RAM Disk.....gets speeds lot bigger than HD laods

Look at it this way. 8GB won't allow you to run most of your games off a ramdisk (I recommend softperfect), these days they take up between 3 - 12GB. 16GB will give you the leeway to run just about anything off a ramdisk. Any HDD bottleneck can be removed. SSD's are a lot faster than HDD's, but sometimes still lag.
