Data redundancy, encryption and easy to move (physically speaking)

Guys, i'm here because i need suggestions.

I'm a programmer and my hard disk contains important data that represents not only copyrighted code of my job but more important years and years of my personal work and personal data. Last month someone broke into my house although luckily the pc has not been stolen, since then i want to take some precautions about data preservation and security.

So my targets are redundancy security, possibility to remove at least one hard disk when i'm not at home and bring it with me in case someone steal my computer and for last but not least data encryption, if they get my hard disk i want to make sure that data inside will be safe.

That said, i would like to avoid an entire server environment but rather stay with small and portable solution if possible (by portable i don't mean mobile but just something easy to move). Although i'm a good programmer i know that storage is not my area so i'm here ask you to suggest me some good options. I thought about something like a hot swap but i don't know if it is possible and safe to put raid hard disk on hot swap supports.

For last but not least what is your suggestion for hard disk encryption? I would prefer something at low lever like my company does, on which even before os loading i get this screen where i must login before to actually start loading the OS, if my mind doesn't betray me it must be something offered by microsoft. Do you have better solutions?
