Need help deciding between these two PSU's

Okay I'm at the part of my build where I have to choose the PSU and I've been looking at the Corsair HX850 and the Corsair AX860 and I am torn between which one I should choose. I mean I know both will get the job done but I don't know whether for 15 dollars more at newegg i can get the ax860 which is platinum certified over the gold hx850. How big of a difference is a platinum psu from a gold psu? And depending which one I choose I also wanted to get a ups for my build and was wondering if this one:

would be enough to run this build below:

Case-Corsair 500r Blk
CPU-Intel i5 4620k
Motherboard-Asus Maximus VI Hero
RAM-16 GB Corsair Vengeance Low Profile DDR3 1600

GPU-MSI Lightning GTX 780 or EVGA Classified GTX 780 (Undecided on which one to choose as one just came out and I'm waiting to read more reviews before settling on one of the two :})

Storage- 256 GB Samsung 840 Pro SSD (Boot Drive)
1 TB Samsung Evo SSD (Storage)

P.S. I'm also undecided on a CPU Air Cooler to pick for my build could you guys throw in your 2 cents on which one I should choose and why I'm looking for the best one to use on my Haswell chip as I've read that alot of the cpu air coolers that ran fine on socket 1155 mobo's don't do to well on socket 1150's if you overclock the cpu which in time I probably will but if I run everything at stock speeds (CPU & GPU) will any of the coolers you suggest do a descent cooling job? And please don't mention any water cooled solutions because it would be too much of a hassle having to worry about a radiator/water pump/etc.. breaking down and then if it were to leak damaging or shorting out my expensive components please only recommend your pick for what you believe is the best CPU Air Cooler to use with this build.

Thanks and before I forget I forgot to mention I will be running x4 Cougar Dual-X Red LED 120mm Case Fans as intakes (2 up front replacing stock Corsair ones and the other 2 replacing the 200mm side panel stock fan) and using three other Cougar Dual X Red LED fans as two will be top exhaust and the remaining fan will be a rear exhaust fan replacing the stock Corsair one if it makes any difference in knowing the total power consumption I will be using. Bronze-Platinum is power efficiency. Platinum and gold are not to different but in the future the platinum will save you more on your electric bill, not by much though.
I would go with the platinum.
This is about as right as it gets.
Here is some quick math for you, lets suppose you have a 500 W power supply, a system that pulls 250 W at full load, and is on 8 hour a day running at full load all the time(unrealistic but makes for much easier math), that puts your PSU at 50% load so its going to be at peak efficiency.


Power drawn from the wall:
Basic - 312.5 W
Bronze - 304.9 W
Silver - 294.1 W
Gold - 277.8 W
Platinum - 271.7 W
 
Do you want fully modular psu=ax or hybrid (semi)=hx? Both are a great choice & will work.

In terms of the GPU I had never heard of the Galaxy version of the 780 how much better is it than the lightning gtx 780 and the EVGA Classified 780? Can someone compare them for me and let me know because I'm kind of a newb when it comes to comparing GPU's :}. Also is this UPS enough to run my system as I don't think as a whole I'll be using the full 860 watts but I'd like to have some headroom in case I want to SLI in the future :} but anyways is this UPS enough to safely run my whole build-

the 860 should be fine for sli but at that point your will be running a tight system and i would recommend getting a bigger psu.
