I have a PC that I built back in 2010 that is based around a Asus Rampage II Gene and a Intel i7-920. I'm looking to start updating it to play current games and I think the motherboard/cpu are going to be the last thing that gets updated. I know there has been at least one update since LGA1366, but I'm wondering what the main differences are? Is clock speed the only stuff I'm missing or has there been other major advancements? I'm just trying to figure out how much of a bottleneck I'll run into after updating my graphics card to something more current.

Clock speed isn't a good comparison since you're looking at architecture changes. That cpu is still plenty powerful, unless you're looking at a crazy gpu setup like dual titans. You definitely want a new gpu and maybe more RAM before a new cpu.
