What CPU Cooler for a LGA1366 Socket?

That particular heat sink has an adjustment where you can raise the fan a bit to clear ram heat sinks. This heat sink is also very popular and does a good job of cooling the CPU so it's not an expensive cooler as some CPU coolers can go over $100. You can get less expensive ones if you want so it's up to you. I did link quit a few coolers of different prices and all of them will work well.

I don't believe space is an issue. It's a big box. Just choosing the right one.

For some reasion I'd like to go 120mm - only because I just hate the horrid spin up of the 80's

Yes that's a typical Dell setup, the heat sink that you linked has an odd sized fan (95mm) and you would be better off with a 120mm or even 140mm. The smaller the fan the faster it has to spin so it makes more noise. Some of the quietest case fans are the 230mm and 200mm fans, so a 120mm o 140mm would be quieter then that 95mm.

I would go with this one unless money is an issue.

That's not too pricey I don't think. Is it? Also looks like it directly supports this socket with all in one hardware to change it out.

158mm at the longest, think it will have any issues fitting? I have regular size ram.
