Would this work. I have a win 8 laptop. Since downgrading is a hassle If i bought a new hard drive switched them and install win xp on the new hard drive would that work?

Provided you can find xp drivers for your hardware, it should be no problem. Before doing that, check to see if xp has drivers for your chipset, motherboard, gpu, wifi, etc. If you can find drivers for everything, go for it.
