Will a corsair cx500 run a sapphire 7850?

It says it needs a minimum of 500 watts but if I have the minimum will that be enough to not crash and stuff like that?

Yes, easily. Manufacturers massively bloat PSU requirements because people tend to see a wattage and go and buy a $10 PSU that fulfills that, in reality wattage means little when deciding if or not a PSU can power a system.

You are more than fine. You only need a 450w unit and really a CX430 would be enough. They have to overstate how much power you need because of people using low quality power supplies that can't put out their rated wattage.
