I built my current gaming computer back in November 2012 and at the time picked up a single EVGA GTX 670 with the intention of going to a SLI setup at some point down the line. However, it appears that this card is starting to have availability issues. Also, the price of that card has not changed very much since the GTX 700's dropped earlier this year. I am somewhat apprehensive about going the used card rout from say Ebay or Amazon, but am not 100% opposed to it. My question is this, given the price difference and possible availability issues for a new card, would it be better to try and acquire a second card like the one in my system for or to sell that card and jump strait to a SLI of two GTX 760s?

Solution
Many games are frame limited to 60fps.
If you are looking at a better monitor, why not a 2560 x 1440 or 2560 x 1600 monitor.
Yes, they are expensive but the added view is wonderful.
You have rediscovered one of the pitfalls of planning for sli.

If you are gaming on a single monitor, I would sell the GTX670 and replace it with a stronger card such as the GTX780.
sli will have other issues if your game does not support dual cards.
And... you will be exposed to lagging with dual cards.

The other thing I forgot to mention is that I am also planing to move to a better display, most likely something in the 120 to 144Hz class and I want to make sure that my graphics solution can take the greatest advantage of it.
