the i5 should suffice but the i7 will do wonders for you. but i won't say that it'll be worth shelling out the extra $ because it clearly isn't. also just for preference, the 8350 is on par with the i7 when it comes to streaming. but i, also, will not say that you should pick it up instead because the i5 is better right now when it comes to purely gaming.

bf4 sp yes, bf4 mp? likely yes. streaming and vid editing will be below the i7/fx8350. transcoding vids with quick sync apps will bolster it to near untouchable levels compared with the fx8350.

I've read some posts that state the AMD 8350 is actually a higher performance for gaming and streaming due to the amount of cores and clock, sorry for probably being really thick, but as I'm new to the scene is there any truth or should I shut up and go intel?

there is some truth to that. especially games like arma 2 and far cry 3 favors amd rigs. in streaming yes, the fx8350 is on par if not better than the i7. but the fx8350 lags behind when it comes to games that relies heavily on single thread performance like vanilla skyrim and SC 2 to name a few. but if you don't mind running just a few framerate lower on them then the 8350 might be the cpu for you.

I'm not sure if you can help but could you suggest the changes I'd need to make to change to AMD as I'm a big day z player and love many shooters especially as the majority of my time will be on games like bf4 and gta 5

As long as Fps drop in games like Starcraft isn't massive this would be more ideal for me as I really want to focus on new games and streaming.

if you are planning to stick with the day z arma 2 mod then the fx is faster. way faster (i can direct you to a very respectable vid review if you like). but isn't there going to be a day z standalone game? i cannot comment on bf4 or (gulp! hopefully) gtaV as they aren't out yet. at the end of the day though, you'll be the one using your pc and you'll be the one that'll dictate how you'll be using it. go where you are most at comfortable. whether amd or intel. just rest assured that whether its an i5/i7 or and fx8350, the real world gaming performance will almost be the same. don't buy into the hype just buy what you really need.
