I was wondering which one would be the faster drive in gaming and pretty much just every day stuff?

Would it make a difference if the adata ssd was 256 and the evo was 120? (In speed of couse.) I found the adata one for only about 170.
256GB drives are generally faster than 120GB drives. That seem to hold true here.

You also pretty much always want to go with the largest drive you can afford.

Slightly, maybe. Larger drives, of the same model line, are generally a teeny bit faster. Again, not that you'd actually notice in real world use.
