worth spending extra over a m5a99fx pro?

I've heard nothing but good things regarding overclocking on both boards. Solid quality VRM's on both. Saber has 8+2 and m5a99fx pro has 6+2 but newer...

The 8+2 will allow for better overclocking. I have a Sabertooth and would buy another in a heartbeat even though it's more expensive.

You'll be able to get higher Ghz because it will be a more stable power delivery to the CPU. You won't be able to OC above 4.5 with the 212 EVO though, I have a very good chip and I reach the thermal max with my 212 EVO at 4.5Ghz

I'm currently undervolted. The 212 just can't handle the heat it produces with the ambient temps in my area (~30C) at that speed.
