The fan on my Lenovo Ideapad S300 got a lot louder after replacing the default HD with a Samsung 840 256GB SSD: it seems like the CPU now runs way hotter then before!

I'm on a fresh Windows 8 installation, chipset drivers are installed, AHCI mode is activated and everything is fast and fluid, but I really can't stand the noise of the fan spinning endlessly in the background...

It could be possible that a heat sensor was damaged when you added the SSD.

Or, you past hard drive could have had a sensor on it, and this one doesn't. With no signal, your computer is assuming there is maximum heat, therefore making the fan run at max RPM.

So, what should I do?
Is there a way to verify id the heat sensor is damaged or not?

There you go

It seems fine, but it is definitely higher than before: I used to get 40° as the normal idle temperature.
Btw, 40°=104 °F

Yes, those temps are fine.

I would check the laptop's motherboard to check if all of the cables are plugged in all the way. It is possible that something got knocked off while you installed the SSD.
Try to find and check something like this:

It seems like I don't have a sensor that looks like that:

What should I do?

I had to disable UEFI Bios in order to be able to boot from a USB device when I was trying to install Windows 8 on the new SSD.
I was forced to do that, since is was the only way to make the computer "see" my USB drive as a bootable device.
The problem is that, once I installed Windows 8 and set everything up, switching back to UEFI results in the BIOS not seeing the SSD and consequentely giving me the "No bootable device" error.
Now I have to keep everything in Legacy Mode if I want to use my computer.
I'd like to roll back to UEFI bios, but I don't know how..

EDIT: Here's same pictures, just to show what I mean: http://imgur.com/a/WfeEP
