2 way SLI or 16GB of RAM?

I am in the process of planning what parts I use for a PC build, and I could either get 2 GTX 760 2GB, or go from 8GB RAM to 16GB. Yes, I know that the ram would be cheaper, but cost isn't really a big factor. I am, however staying with the 2 products, so just which will give me more power?

GPU: Gigabyte GeForce GTX 760 2GB x2
-OR-
RAM: G.Skill Sniper Series 8GB DDR3-2400 x2

UPDATE: These are the 4 build options that I am looking at. http://pcpartpicker.com/user/SynchHD/saved/

Solution

More RAM would help for the editing, but the difference of the SLI would be much greater for gaming, so I'd recommend the SLI.

The best build would be the i7-4770k build with 2 cards, obviously this comes at a greater price.
Having two GPU's instead of one would help a lot for gaming side of thing whereas having the i7 instead of i5 would help more towards the editing side of things...

i7-4770k w/ 2 cards - best build
i5-4670k w/ 2 cards - more gaming build (could still edit)
i7-4770k w/ 1 card - more editing build (could still game)
i5-4670k w/ 1 card - Gaming build but less powerful.

So by 2 cards are you saying 770 SLI or 760 SLI?
Would it be worth it to get an extra memory module, so I have a total of 16GB?
