I have a Dell XP8500 with 2GBx2, 240-pin DIMM, DDR3 PC3-12800 memory modules. I am thinking that an increase to a total of 8 GB would be of some benefit. I understand that it is better to have just 2 sticks of 4GB each but this is an expensive & wasteful way of doing it.Is it possible please do say what the performance hit is of having 4 rather than 2 sticks. My interest is Flight Simulation

Should make little or no difference.
Be sure to get the new sticks specs as close as possible to those installed.
Some motherboards can be picky about playing pick'n mix with memory.
Your system needs to have a 64 bit OS installed to use more than 4Gb of memory, if its a 32 bit OS the system already has as much memory as it can use.

If you are a super profensional editer, you can you be needed to buy 24GB of dedicated RAM. (or 16GB.) But 8GB, is enough for every game in the whole world for now. sony vegas pro 11, will use up to 10GB of RAM at some point. But 8 is enogh, and it will improve alot, in your system.
