Is my psu really 500 watts?

I recently upgraded the GPU in my computer from a Sapphire 5450 1GB DDR3 to a Sapphire 7850 2GB GDDR5 and I recently have been having problems in my computer certain higher demanding games will freeze for long periods of time freezing my entire computer not allowing me to alt-tab, CTRL ALT DELETE, CTRL SHIFT ESC or
alt -F4. At first I blamed my GPU and tried different solutions to get it working and eventually realized it only freezes in certain highly GPU/CPU demanding games. I then blamed both my CPU and GPU only to realize that my CPU worked before the new GPU and that my GPU works in lower demanding games. I then looked towards my PSU I realize there is no dependable way to test a PSU output without an actual tester and I don't have one. So I looked towards HW monitor for an estimate and shortly realized I don't understand any of it and need help looking at what might be wrong if this shows that anything is wrong.

QUESTION IF YOU DON'T WANT TO READ ALL THAT OR ALREADY DID-
What part is at fault here my GPU works in low demanding games but freezes in higher demanding games making my entire computer freeze my CPU that worked before I got a new GPU or my PSU that might not be so 500w.

Example of freezing-
I can play Arma 2 great max settings without freezes but the exact same game with a more CPU and GPU demanding mod DayZ I will freeze excessively and the game is unplayable.

I think you've pretty much nailed it. I've never heard of that PSU brand before :-/ and cheap PSUs tend to get real flaky when you get up to their max power output. My advice would definitely be to get a new PSU. You can get pretty decent budget PSUs that will have no problem running your system for relatively cheap. I'd stick with brands like Antec, Corsair, Seasonic, Enermax, etc.
