Hello- Would you recommend one of these monitor for a duel monitor setup?

The Dell is a great photo editing monitor..... kinda not so much for gaming.
the BenQ very good, but it's alast generation monitor (new one is 144Hz) and that one is a second place finisher to the Asus

You are pretty much asking IPS vs TN. The Dell has an IPS panel, better color, better viewing angles. Less responsive, maybe not as good for gaming. The BenQ has a TN panel, which doesn't have the same color or viewing angles, but is much more responsive.
For gaming, I would get the BenQ. Otherwise, I would get the Dell. In a dual setup, I might get one of each.

I noticed both of the monitors you picked have adjustable height stands. As a result I assume this is a feature which is important to you.
I think I have a solution which can get you what you want at a lower price.
Get a Vesa Mount monitor such as this one from ASUS for $149 dollars after rebate.

Then get this highly rated dual monitor mount from Amazon for around $45

Out of the 859 reviews for this dual monitor stand 741 of them are 5 star reviews. Plus there are nearly 100 photos from users on the link above so you can see plenty of pictures of what it may look like in your house. Solid as can be, does not wobble, has cable management loops, monitors can be rotated, and will give you the height adjustments you need.
2 x ASUS monitors at $149 = $298
1 x dual monitor mount = $45
Total $343
That should save you a good amount of money over your two original options. Plus the ASUS monitors have thin bezels which is a good thing to have for a dual monitor set up.
As an alternative I would suggest stopping by your local Sam's Club and look at this LG 24" inch. Very nice for $168

You should be able to use a Xbox 360 via HDMI on the BenQ. How well it toggles between being a display for a PC and the Xbox, I don't know. Usually this isn't much of an issue anymore. Even my Dell from 2010 can toggle inputs well. The Dell would require an adapter from HDMI to DVI, which would result in the need to find another way to handle audio as well as who knows what other problems might arise.

Yeah, just connect your computer via the DVI and the Xbox via HDMI. The monitor menus should let you toggle inputs.

Depends- How much are you willing to spend and how what kind of wattage does your PSU support?
My first thoughts are SLI 760's. Lots of power there. Plenty for single/dual monitor gaming/editing.

You will be able to watch movies fine. It won't look as good as an IPS, but it won't look terrible.
Look up calibrations for the VG248QE, it improves the quality a lot. Out of box settings are not optimized (I have this monitor btw). Keep in mind you will have to manually set the refresh rate from windows to 144hz to take full advantage of that monitor.
