Looking to create a non-RAID NAS.

I've got a lot of HDDs of varying sizes from 500 GB to 3 TB. I currently keep them somewhat sorted and keep a rough spreadsheet cataloging which drives have what for sorting purposes.

I use an external, USB, HDD dock to access the drives, but I've got 7 or 8 and my dock holds 2. It's inconvenient to use this way.

Optimally, I'd love to put them in a machine and have them all used as a single logical drive for easier sorting, but I've heard that makes failure more likely and I'm not sure if it's even possible with different sized drives.

I'd at least like to be able to access them all simultaneously anywhere on the network. I also wander a bit about the accessibility since there's lots of HD content and between my wife and myself, we might be streaming different HD content from the NAS to different places at the same time. Is this doable? Is a NAS even my solution?
