i7 LGA2011 + 770 SLI + ancillaries, how many watts?

So, 850W PSUs are aplenty and some can be had for quite a nice price.

I don't trust any of the online calculators after measuring what my current system uses (max 230W when CPU+GPU both at full load - 2500k stock clock with a 7870).

I'm planning on a new build - likely with one of the new 2011 CPUs - 4820k.
And then put on twin 770s in SLI. Plus water cooling them all, and overclocking them all.
I'll also need power for 10 fans and 2 SSDs + 2 HDDs.

So how many watts would I really be using?

I believe total power use would take me very close to a 850w PSU's max output.
When running the toughest games, both the CPU and GPUs would be running at or close to the max.

I'm wondering how harmful it is to run close to the PSU's max when all the recommendations tell me to stay at 50-70%.

I got a real good deal on a Corsair AX860i and I'm just wondering if I made the wrong call. The price was really good and it's of course a very solid PSU. Apparently it can even do 110% rated power at 46 degrees C, so I guess I'm not in too much trouble...?

What is the problem in real life, if I run a PSU at 80-85 % when gaming? Is there a risk in it?

I have an XFX now, I just bought the Corsair. For XFX, I never received the +3 years warranty extension, even though I mailed the customer service several times telling them the web registration did not work.

The 860i has only received the best review and carries a seven year warranty right out of the box... My question is only whether or not the 860 watts max power will be enough for me. My research shows that the max power consumption of the complete system should not exceed 720 W at any point, so will this 80-85 % of max PSU power be safe to run? (The 860i can even do 110% of max rated power at 46 centrigrades, mind you).
