My current system:
Intel Core i7 930 2.80GHz (Bloomfield) (Socket LGA1366)
Gigabyte GA-X58A-UD3R Intel X58 (Socket 1366) DDR3 Motherboard
1 x GTX 570
12GB DDR3 Ram

Obviously a full system upgrade would be better but would it really be worth it over the following options?

Option 1: Existing system i7 930 2.8GHz and buy 2 x GTX 780s
or
Option 2: Upgrade mobo, ram, i7 4770k 3.5Ghz etc and 1 x GTX 780

What are your thoughts?

hey, What resolution/monitor are u using? If its only 1080p or 1440p, option 2 is better BY FAR.

X58 chipset is missing a lot of new features, such as SATA III, USB3, PCIE 3.0, etc.

Also, the 920 will certainly be a big bottleneck, especially if its not Oced. I use a i7 920 at 4ghz and its slightly bottlenecking my sli 660tis, which are significantly slower then 780s.

1 780 is more then enough for games.

I suggest Option 2 :

A GTX 780 will be enough for most games and the money saved will allow a system update which I suggest should include a SSD to go with the new motherboard, ram and I7-4770K cpu.

well a full system upgrade will probably net you 20-30% better performance... a 2nd 780 will guaranty your system will be bottle-necked by your cpu; that said unless you have multiple monitors i don't think you'll notice the bump in graphic goodness with a 2nd 780.

My full system setup is:

2 x 40" LED TV @ 1080p
1 x Samsung 250 GB SSD (Boot drive and primary work tools)
1 x WD Black 2TB (Apps and games installs)
12 GB DDR3 Mixed speeds so Im down at 1366Mhz with them
Intel Core i7 930 2.80GHz (Bloomfield) (Socket LGA1366)
Gigabyte GA-X58A-UD3R Intel X58 (Socket 1366) DDR3 Motherboard
1000W Corsair but starting to not power the machine from cold starts (3 years or so old)
Coolermaster NVIDIA special edition full atx case

I am hoping to run maxed out settings on the Oculus Rift when it is released but maybe gaming on 3 screens (I have a dell 30" bit burnt out now - whites are yellow for center screen with the 2 x 40" 1080p TVs) would be nice but I've found at these screen sizes it's more of a drawback to gameplay rather than an advantage, but it does feel nice, yet dissorientating... But that could be my GTX570 freaking out...

So it appears that the cpu and mobo is going to limit me quite a bit then...

The full upgrade solution I was thinking about building is:
1 x EVGA GeForce GTX 780 Classified 3072MB GDDR5 PCI-Express Graphics Card (03G-P4-3788-KR)
1 x Samsung 500GB SSD 840 EVO SATA 6Gb/s Basic - (MZ-7TE500BW)
1 x Intel Core i7-4770K 3.50GHz (Haswell) Socket LGA1150 Processor Retail
1 x Gigabyte Z87X-OC Intel Z87 (Socket 1150) DDR3 ATX Motherboard
1 x Corsair Professional Series HX+ 750W '80+ Gold' Modular Power Supply (CP-9020031-UK)
1 x TeamGroup Vulcan ORANGE 16GB (2x8GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit
1 x NZXT Phantom 410 Enthusiast Midi Tower Case - Black/White
1 x Western Digital Caviar Black 1TB SATA 6Gb/s 64MB Cache - OEM (WD1002FAEX)
1 x Corsair Hydro H55 Quiet Liquid CPU Cooler

I still cant find out any info regarding the release date of the Oculus Rift, so my best guess is mid 2014, at which time the upgrade I've listed above may not max out applications and games on the Oculus Rift. So I'm not sure if it's going to be 1080p per an eye, so this is why I was thinking 2 x 780s.

I saw on a site that it said oculus rift would be released on 2015, but there is no official release date, but its mostly rumored to be in 2014 (and i hope) and on the 1080p, it will be 1920 x 1080p (960 x 1080p per eye) if not mistaken, and i think whether one or two cards will depend of the game, games like WoT, CoD, etc will be fine with one, on the other hand Crisis 3, Arma III, etc i dont know if one is enough.
