What is better for performance? One video card to run three monitors or two video cards. I want to stick with Nvidia GTX cards. Also good 27" monitors that will support 3D.

It depends about what GPU you are talking about. For 3 monitors gaming you will need a lot of power. If you want only NVIDIA cards then 770 SLI or single 780. But still you won't get more than 35-40 FPS on newest games.

I an running a corsair ATX 1200 for power. What are the advantages and disadvantages of two 770's and running one 780 I am currently running one PNY GTX 580 enthusiast model which is overclocked. Would it be worth just purchasing another 580?

the advantages of two 770's are more performance, there aren't really and disadvantages.
I would sell your 580 and buy either a titan or a 780.
