whats faster? 1TB with 1 plate or with 2 plate?

Fewer platters at a given capacity is better, all else being equal. Fewer platters means that the drive is faster, cooler, and quieter. On an empty drive with two platters data can be written on the outside of both platters and be accessed faster for that reason.
