As the title says,

Performance wise, which is better to choose from? Also, i would like to run 3 monitors.

Solution

I would Choose the EVGA model of the GTX 780
http://www.evga.com/Products/Product.aspx?pn=03G-P4-2784-KR
Firstly it has a higher clock speed, and secondly it actually looks good, i dont know about anybody else but i hate the look of the Windforce 3X. The fans look really ugly and you can see the copper pipes that make the fans look brown, check the pics. Personally i would buy the EVGA card or maybe the MSI 780

These is a really nice looking card...

Personally i would pick the EVGA but if you like the Gigabyte card then by all means get it.
One other thing with SLI is that there can be cases of Micro-stutter and also driver problems when you SLI, so just a warning.

Solution
Graphics cards are not rated by looks rather than by performance and if u search forums about the windforce cooling there is no man in the world who will not say that gigabyte doesnt make good cooling solution.
If u are looking for higher clocked cards then my choice would be the zotac amp gtx 780.

I do realize that the windforce 3X is a really good cooler and all I have read is good reviews, I also realize that a graphics card cannot be based on its looks, but it may be a really good card but personally it doesn't look nice.

Also you could buy a slightly cheaper card with a good cooler and clock it up, with GPU boost 2.0 out and tools like MSI afterburner and EVGA precision, it would be really easy to clock it up to the speeds of more expensive cards, and if it has a good cooler on it then it won't be a massive issue with the heat and noise levels.

Yes you are right!I agree that evga makes good coolers and good customer service. But when compared to zotac it not that case.Zotac has a five year warranty and higher clock speeds on their amplified versions

Honestly I love my gigabyte. But evga cards are basically equal to them in terms of performance. It's really just personal preference between them imo. Idk about the other company.
