I would go for a Single 760 or 7970 over 2 560s, you usually want to go with a single card over dual card because it leaves room to get a second later on. I would also suggest getting a different PSU, Antec, Corsair, Seasonic and XFX are trusted brands, make sure you read reviews for anything that isn't one of those companies (even read reviews for those companies). I was unable to find any professional reviews of the one you listed which is something I would immediately avoid.

What is your budget and where are you located?

To answer your questions, everything is compatable so it will work. I use an i5/7970 GHz and get great fps on ultra preset (sorry can't remember exact # but 80+ is a safe number). I have read that 560s don't do as well because of the 1gb VRAM but will run the game on high easily.

When I look into SLI 560 TI performance on battlefield 3, I'm finding a larger amount of posts saying that 1 will run it close to ultra at 1920x1080, but a second card does not improve performance and can even reduce performance due to the 1GB bottleneck.
