I have had quite a few that say click to install, then it installs without ever asking where or giving me a choice. Usually it does ask if I want a desktop shortcut. I will search my browser settings to see if I can find where it asks for the default download folder.

Almost every applications will say:
Default, or Custom or Advanced.
Accept the Default, and it will almost always go to the C drive. Custom or Advanced will generally give you the option of where to install it.
The desktop shortcut is tiny, and can live on the desktop. Where the actual application/game is installed is the key issue.
You just have to pay attention during the install, and read what the dialog boxes actually say.
